Ingredients:

- 1kg pork ribs, cut into individual pieces

- 4 cloves garlic, minced

- 1 small onion, finely chopped

- 3 tablespoons fish sauce

- 3 tablespoons sugar

- 1 teaspoon ground black pepper

- 1 cup coconut water

- 1 tablespoon vegetable oil

- Optional garnish: chopped cilantro or green onions

Instructions:

1. In a large bowl, marinate the pork ribs with minced garlic, chopped onion, fish sauce, sugar, and black pepper. Mix well, ensuring all the ribs are coated. Let the ribs marinate for at least 30 minutes, or refrigerate overnight for more intense flavor.

2. Heat the vegetable oil in a deep pan or pot over medium heat. Once hot, add the marinated pork ribs and sear them on all sides until they turn brown. This step helps to lock in the flavors.

3. Pour the coconut water into the pan, ensuring that the ribs are mostly submerged. If needed, add a bit more water to fully cover the ribs. Bring the liquid to a boil.

4. Reduce the heat to low, cover the pan, and let the ribs simmer for about 1-1.5 hours, or until the meat is tender and falls off the bone. Stir occasionally and add more liquid if needed to prevent the ribs from sticking or drying out.

5. Once the ribs are tender and cooked through, remove the lid and increase the heat to medium-high. Let the liquid reduce and thicken, about 5-10 minutes, to create a flavorful sauce. Stir occasionally to prevent burning.

6. Taste the sauce and adjust the seasoning if needed by adding more fish sauce, sugar, or black pepper according to your preference.

7. Once the sauce has reached the desired consistency, remove the pan from heat.

8. Serve the pork ribs hot, garnished with chopped cilantro or green onions if desired. They pair well with steamed rice and steamed vegetables.
