Ingredients:
- 500g basa fish fillets, cut into bite-sized pieces
- 3 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 small shallot, minced
- 2 tablespoons sugar
- 3 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon black pepper
- 1/2 cup water
- Spring onions or cilantro for garnish (optional)
Instructions:
1. Heat the vegetable oil in a frying pan or wok over medium heat.
2. Add the minced garlic and shallot to the hot oil and fry until fragrant, about 1-2 minutes.
3. Add the sugar to the pan and cook until it melts and turns golden brown. Be careful not to burn it.
4. Add the fish sauce, soy sauce, oyster sauce, and black pepper to the pan. Stir well to combine everything.
5. Add the fish fillets to the pan and coat them with the sauce. Cook for a few minutes until the fish starts to brown.
6. Pour in the water and let it come to a simmer. Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the fish is cooked through.
7. Check the seasoning and adjust salt if needed.
8. Garnish with spring onions or cilantro if desired.
